I will be picking up my new MKIII512 on Friday . I plan to field strip and clean the packing grease out of it as per Bullseye's recommendation. Would it be ok to use drylube or should I go with something else?

I would use something else, I like remoil or mobil 1 synthetic motor oil.

Just about any lubricant is fine as long as you use it sparingly. No wet, drippy surfaces in side the pistol. I apply the lube to a rag then wipe the rag onto the components.

A dry lube will not cut the packing grease. I use Kroil or Breakfree CLP to do an initial cleaning. Then a very thin wipe down with CorrosionX, Weapon Shield or similar product.

Breqakfree CLP for all cleaning and lubing, it works for me and for the Military too.

I guess that I am pretty "Old School". I still use Hoppes and brushes/swabs and patches for cleaning. Still using Hoppes oils too, but like Bullseye, I prefer to put some on a rag and then wipe down the pins or bolt upon re-assembly.
